Even with the snow this week, we are looking forward to spring and what’s spring without baseball? Get out the peanuts and Cracker Jacks! Actually, hold the Jacks, we’ve made our own tribute to the Minnesota Twins’ on our spring menu with the “CrackerJack.” Layers of peanut butter and buttered popcorn panna cotta (topped with a thin layer of apricot-lemon gelée to cut the sweetness) the Cracker Jack excites for spring in every bite! To emphasize the creaminess of the panna cotta, we added a little texture with our take on caramel corn. Our home-made version includes Spanish peanuts and crisped rice dressed with a rich, molasses-brown-sugar, homemade caramel. Drizzled with salted caramel sauce, a dollop of salted caramel ice cream and a vanilla wafer, you could only dream of this dessert at a baseball game.
